This is an actual copy of what meals we will be having during the month of may. I just typed it all up in a blank spreadsheet and saved it. When I am ready to make a new menu, I just type over the information I no longer need and reuse the same file. If you do not have spreadsheet on your computer, there are several printable calendars you could choose from the web and hand write your menu as well. Listed at the top above the days, I have chosen a meat or soup to designate to each day of the week. This makes my menu planning very easy as I either refer to old recipes I already have or search for new ones on the internet to try. www.recipezaar.com is my new favorite for searching for new recipes. I just pick the meat or soup type it in, and it offers thousands of recipes for your ingredient of choice.

For dinner this evening we had baked catfish, pork and beans and buttered carrots. I placed the thawed catfish in a 9x13 pan, sprinkled a mixture of many different seasonings and herbs over both sides, I baked them at 425 for about 30 minutes or until the fish flakes easily. For the buttered carrots I placed a bag of baby carrots into my Micro Steamer with a stick of light butter and cooked for approximately 15 to 20 minutes in the microwave. It was a huge success, the fish was delicious.
